Cupping Notes: Hints of cocoa, with soft cranberry – like acidity. Balanced, medium body. Refreshing finish reminiscent of cherries.
These cupping notes are relative to light roast profiles. As the roast profile darkens toward medium to medium/dark, these notes will be slightly eclipsed, resulting in more sweetness and roasted flavor. Once the french roast profile is attained, most of the aforementioned cupping notes will be difficult to detect.
About this Coffee: This coffee is 100% Arabica coffee grown high in the West Andes of Colombia. Only the ripe, red cherries are handpicked and manually selected. They are processed using the wet method only with high-quality mountain water, which is abundant in the country, and fermented at each plantation. The temperature variations during the day and night are essential to the quality of this Colombian. The low night time temperatures, associated with relatively high altitudes, reduce the coffee bean ripening rhythm and give it higher levels of acidity and very particular sweet notes.
