These cupping notes are relative to light roast profiles. As the roast profile darkens toward medium to medium/dark, these notes will be slightly eclipsed, resulting in more sweetness and roasted flavor. Once the french roast profile is attained, most of the aforementioned cupping notes will be difficult to detect.
About this Coffee: This coffee is 100% Arabica coffee grown at high altitudes in the West Andes of Colombia. Only the ripe, red cherries are handpicked and carefully selected. They undergo processing using the wet method, utilizing high-quality mountain water abundant in the country. The cherries are fermented at each plantation. The temperature variations between day and night play a crucial role in the quality of this Colombian coffee. The cool nighttime temperatures, coupled with the higher altitudes, slow down the ripening process of the coffee beans, resulting in a delightful balance between sweetness and acidity in the cup.
