Because these coffee beans grow at high altitudes with consistent moderate temperatures and rich volcanic soil, the cherries ripen more slowly which gives this coffee a rich and hearty flavor. These cupping notes are relative to light roast profiles. These cupping notes are relative to light roast profiles. As the roast profile darkens toward medium to medium/dark, these notes will be slightly eclipsed, resulting in more sweetness and roasted flavor. Once the french roast profile is attained, most of the aforementioned cupping notes will be difficult to detect.
Cupping Notes: Floral, citrus and soft fruit, with a hint of caramel and chocolate. Clean and rich – full bodied.
