Processing: Fully washed and sun dried during the first phase and later given the final touches in the driers. All coffee is given 60 days rest.
Altitude: 1,300 M.A.S.L
Cupping Notes: Perfectly soft and balanced body. Medium to low acidity. Citrusy brightness, clean and sweet with caramel finish.
These cupping notes are relative to light roast profiles. As the roast profile darkens toward medium to medium/dark, these notes will be slightly eclipsed, resulting in more sweetness and roasted flavor. Once the french roast profile is attained, most of the aforementioned cupping notes will be difficult to detect.
About This Coffee: The region of Panama where this variety is grown has the perfect climate. Humid conditions, consistent lower temperatures and ample shade allow the coffee beans to grow at a much slower pace, resulting in this highly coveted intensely flavored coffee. This climate along with the rich, volcanic soil of Volcan Baru, makes for a rare combination which is prime for coffee farming.
